The Cherry Bomb


For my birthday this year, my dad gave me a bag full of cherries that he and his wife, Joanne, picked that morning from their orchard up on Whidbey Island. Making a cherry dessert was a given for us but we also wanted to find a way to use them in our dinner as well. After a quick Google search for "pork" and "cherries," we ran across this recipe: Grilled Pork with Cherry Salsa. We made a few minor adjustments, such as adding lemon zest to the marinade and using green jalepeños instead of red, but overall, this recipe was too good to not share. We had never had a cherry salsa before and were completely floored by its complexity. Take advantage of cherry season and try this recipe!
