I recently sent Elliott to Costco for toilet paper and he came back with a car load of supplies, including a chunk of cheese the size of a small baby. Granted it was Beecher's Flagship, but still! Then my dad stopped by with a bag of apples fresh from his orchard. It was time to get to work, so we came up with this simple cheesy-apple treat that's much easier to make than it is to say. It's like an open-faced croissant that can be thrown together in a few minutes but is still sophisticated enough for holiday dinner parties. So what if it cancels out your workout in just a single bite? ;-) Ingredients: 1 sheet of puff pastry, thawed 1 small, tart apple, sliced Grated Beecher's cheese Fresh chives Salt, to taste Unroll the puff pastry onto a lightly floured surface. Lightly flour both sides to prevent sticking and gently roll out with a rolling pin. Snip the four corners so that the pastry becomes an octagon. With your fingers, press in some softened butter. Then, in the middle, cover with grated Beecher's cheese, apple slices and chives. Fold in all the sides, moving from one corner to the next in a circular manner and brush the crust with melted butter then sprinkle with salt. Bake in a 400˚ oven for 15-20 minutes until golden brown. Remove to a metal rack to cool slightly before eating. You can thank/curse us later!
